Apple Snickerdoodle Dessert

  
Tonight’s treat…a bowl of cinnamon baked apples topped with Snickerdoodle Cashew Milk frozen dessert. A perfect combination! Delicious! 

Ingredients

  1. 2 peeled and chopped tart green apples
  2. 1/2 cup brown sugar
  3. 4 tbsp. butter, melted(Earth Balance, Soy Free)
  4. 2 tsp. ground cinnamon 
  5. 1 container of Snickerdoodle Cashew Milk frozen dessert

Directions

  1. Preheat oven to 350•F
  2. Mix chopped apples, brown sugar, ground cinnamon, and melted butter together in a bowl
  3. Pour mixture into a baking dish
  4. Bake for 15 mins or until golden brown
  5. Let cool, then top with a scoop or two of Snickerdoodle Cashew Milk frozen dessert

Chicken Tenders 

  
Gluten and dairy free chicken tenders! They are crunchy on the outside and juicy on the inside. My son dipped his in ketchup and I chose honey for a bit of sweetness. This is a delicious, quick and easy recipe. 

Ingredients

  1. 1 pkg. Organic Chicken Tenders (I get mine from Trader Joe’s)
  2. 2 Large Brown Eggs
  3. Simply Balanced Gluten Free Plain Breadcrumbs
  4. Gluten Free All Purpose Flour
  5. 1 Cup Sunflower Oil

Directions 

  1. Heat sunflower oil in skillet
  2. Pour a cup of gluten free flour into a bowl, and in a separate bowl, pour a cup of gluten free breadcrumbs
  3. In a third bowl, whisk the eggs
  4. Coat each chicken tender in the eggs, then in the flour, back in the eggs again, and finally in the breadcrumbs
  5. Place chicken tenders in the skillet and fry on each side until golden brown (about 7-9mins) 
  6. Remove from skillet and place on a plate with paper towel (to absorb the oil)
  7. Serve with ketchup, honey or bbq sauce
