Veggie Burgers and Beet Salad

Amy’s veggie burgers topped with sautéed mushrooms and onions, spicy brown mustard, and chopped arugula. A beet salad with heirloom tomatoes, walnuts, fat free feta, and a homemade vinaigrette. 

Ingredients forVinaigrette 

  1. 2 tablespoons honey
  2. 1 1/2 tablespoons Dijon mustard
  3. 3 tablespoons red wine vinegar 
  4. 1 1/2 tablespoons minced shallots
  5. 1/2 teaspoon salt
  6. 1/4 teaspoon black pepper
  7. 6 tablespoons grapeseed oil 


  1. Whisk all ingredients in a bowl 
  2. Shake in a container with lid, so it can emulsify
