Apricot Glazed Swordfish

Apricot glazed swordfish steak served with an apricot, plum, and strawberry spinach salad, topped with fat free feta and a drizzle of balsamic vinegar. 

Ingredients for Apricot Glaze

  1. 1/2 cup of apricot preserves (I used trader joes organic, no sugar preserves)
  2. 1 tablespoon earth balance buttery spread
  3. 1 teaspoon cider vinegar
  4. 1 teaspoon Dijon mustard


  1. Melt buttery spread in a saucepan over medium heat
  2. Add the preserves and cook 1 minute
  3. Add the cider vinegar and Dijon mustard, stir together, cook for 5 minutes
  4. Remove from heat and let cool 3 minutes
  5. Place your swordfish steak in an oven safe pan and pour the glaze over top
  6. Bake swordfish for 25 minutes in a 350F oven
