Strawberry Crepes


Sprouted whole grain strawberry crepes. I used Pamela’s gluten free, non-dairy, 0g sugar, 6 grain pancake mix and made a homemade strawberry compote for the filling. 

Ingredients for compote filling

  1. Basket of sliced fresh strawberries
  2. 1/2 cup Earth Balance buttery spread
  3. 1/3 cup Coconut Sugar (blonde)
  4. 1 Tbsp cornstarch 

Directions

  1. Melt butter in sauce pan over medium heat
  2. Add strawberries and coconut sugar, stir for 5 mins.
  3. Stir in cornstarch and let sit for 1 minute. 
  4. Fill crepes and roll up. Pour remainder compote over top crepes.
