Peach Pancakes


Sprouted whole grain pancakes topped with a peach coconut cream compote and sprinkled with cinnamon. I used Pamela’s gluten free, dairy free, 0g sugar pancake mix. 

Ingredients for Peach Compote

  1. 4 ripe yellow peaches
  2. 1 can coconut cream (I used Trader Joes thick and creamy) 
  3. 2 Tbsp Pumpkin pie spice (Trader Joes) 
  4. 1 Tbsp cornstarch 

Directions

  1. Cut peaches into small cubes
  2. Heat peaches in a medium sauce pan over medium heat
  3. Add coconut cream, pumpkin pie spice, and cornstarch 
  4. Stir and simmer for 5 minutes
  5. Remove from heat and pour over pancakes 
  6. Sprinkle cinnamon over the top

*You may want to add sugar (white or light brown sugar for taste)
