Chicken English Muffin 

Roasted chicken on a toasted fat free English muffin topped with micro greens and sliced radishes. 


Apple Crisp Muesli 

Apple Crisp Muesli made with sliced jazz apples, Trader Joe’s Muesli, and topped with a scoop of Snickerdoodle Cashew Milk frozen dessert. 


  1. 2 cups peeled, cored, sliced jazz apples
  2. 1/2 cup white sugar
  3. 1 tbs gluten free flour
  4. 1 tsp ground cinnamon 
  5. 1/2 cup Trader Joe’s muesli 
  6. 1/2 cup water
  7. 1/2 cup gluten free flour
  8. 1/4 cup raw brown sugar
  9. 1/8 tsp baking soda
  10. 1/8 tsp baking powder 
  11. 1/2 cup melted butter (earth balance) 


  1. Preheat oven to 350 degrees F (175 degree C).
  2. Place the sliced apples in a 9×13 inch pan. Mix the white sugar, 1 tablespoon gluten free flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
  3. Combine the oats, 1 cup gluten free flour, raw brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
  4. Bake at 350 degrees F (175 degrees C) for about 45 minutes.
